Wine made from Tempranillo grapes coming from our ecological vineyard Viña Hermosa. We use natural traditional grape-growing techniques, obtaining totally ecological grapes high in resveratrol, a natural anti-oxidant. According to official laboratories, SANTALBA is a quality wine with high naturally level of resveratrol , over six times more than most table wines. Harvesting was carried out by hand into 12 kilo crates to avoid damaging the grapes. The bunches were destemmed and given a pre-fermentation cold maceration in small tanks.
Controlled-temperature alcoholic fermentation with vigorous daily pumping-over was followed by a long post-fermentation maceration with skin-contact to extract both colour and aroma. The wine was then transferred to French oak barrels for 8 months ageing, racked off from barrel to barrel by gravity.
Finally the wine was bottled without being filtered for its naturalness, strong character and great structure to mature in the silence and darkness of our bottle-store into a wine worthy of Bodegas SANTALBA.
Type of wine
Visual: Deep Indian ink with a purple meniscus which stains the side of the glass with a thick coat of glycerine.
Aromas: Powerful nose laden with black fruit, ripe plums, floral notes, caramelized toffee, violets, liquorice, spices, dairy and medicinal tones.
Taste: In the mouth, elegant intensity and smoothness, fruit touches in the aftertaste accompany a slight acidity. Intense, full-bodied, sweet but with rounded tannins, powerful and with a long finish.
